Basic FishIts fish season. Every Friday during lent, many turn to fish for their meatless meals.

Fish is one of the fastest things you can cook.

Heat a teaspoon of oil in a large nonstick skillet over medium-high heat.

Season the fish with salt and pepper and cook until opaque throughout, 3 to 4 minutes per side. It should flake easily. Do not overcook.

You might want to season white fish with lemon pepper. I’m using the term white fish as a category here. It can be trout, halibut, cod…

Also good for white fish is drizzling with a mix of melted butter, a little lemon juice, and garlic.

Meatier fish like tuna is good with traditional salsa or mango salsa.

You can glaze salmon with a little maple syrup.

You can serve with a big salad along with crusty bread with olive oil, garlic and Parmesan for dipping, or buttered noodles.

That’s it. The basics. You can’t get much simpler, can you?

      Hi Carole,
      I have been enjoying this site for a number of years now and always discover something new. I am on the slim side, in my late 40s, and eat pretty healthily, though I do enjoy the odd Creme Caramel or Cookie indulgence. I recently had a health check-up as I had been feeling under-par, and I have discovered I have high Cholesterol. would be interested to hear if you have any pointers for me. I enjoy your recipes and always turn to your recipe ebooks, which I bought a few years ago. Any tips you could give me?

        Hi Fiona,

        The newest research shows that cholesterol is not the monster they thought it was. Your body makes cholesterol. They are finding that the cholesterol you eat has little, if anything to do with how much your body produces. This research has been circulating for a couple of years now, but because they make so much money from dangerous statins, it has been slow to be released to the public. The American Medical Association has just reversed their position on cholesterol.

        Try to avoid statin drugs. If they make you feel like you must take them, make sure to take CoQ10 supplements as statins deplete your CoQ10 levels.

        You should continue to avoid unhealthy fats, and keep eating your balanced diet and getting some exercise daily.

        I have someone else who is struggling with this as well. I will do an article for you next week. My daughter is visiting for the weekend, so I will be busy with her.
