4 medium potatoes

4 boneless, skinless chicken breast halves,

1 Tablespoon olive oil

½ cup sliced green onions with tops

¼ cup prepared teriyaki sauce

Wash and cut green beans. Put in pan with about a 1/2 inch of water over medium heat to steam.

Microwave potatoes about 8 minutes, until tender, but not mushy.

While potatoes are cooking, brown chicken in oil over high heat, about 5 minutes.

Either cut chicken into one inch chunks or shred. Put back in pan.

Cut potatoes into thin wedges. Add to pan.

Optional – you can also add onion and green pepper.

Sauté and toss until potatoes are lightly browned.

Add teriyaki sauce

Toss until heated through.

Serve with fresh steamed green beans.

Serves 4

280 calories each

You can make this for one or 2. Use one small chicken breast and one potato per person. Large chicken breasts can serve 2.

    This is my kinds food Carole! It is too nice to spend hours in the kitchen during tge warmer months. I like to use olive oil in recipes. Green beans are very popular in our home. I am giving this one a try.
