Fun, flavorful, and healthy – Kabobs are fun to eat, aren’t they? And they’re not hard to make. Even the kids will have fun helping to put them together. Here’s a recipe for basic kabobs –
1/2 cup olive oil
1/4 cup wine vinegar or favorite vinegar
1/4 cup catsup
1 teaspoon salt
1/2 teaspoon oregano or rosemary
1/4 teaspoon pepper
2 Tablespoons Worcestershire sauce
1/2 cup chopped onion
2 cloves garlic, peeled and mashed
3 lbs. Steak cut into 1 inch cubes
Green pepper squares
Pearl onions, or onion cubed
Tomato wedges or cherry tomatoes
Combine marinade ingredients in a large bowl. Add meat. Stir to coat. Cover tightly and refrigerate for 4 hours, or overnight.
On skewers, alternate meat, and vegetables- in varying combinations- (if using bamboo skewers, soak in water 30 minutes before threading) example- tomato, meat, green pepper, onion, meat, tomato, onion, meat, mushroom
Before lighting grill, spray grill with non stick spray.
Turn kabobs often, cooking until done- about 7-10 minutes.
Makes about 8 – Around here, the onions are popular. You might want to make a few extra kabobs with just onions…
