I made up a new recipe over the weekend and it turned out pretty great.

This is a hearty fast dinner! And its one way to make a large chicken breast feed 4.

1 large or 2 medium chicken breasts

1 tablespoon coconut or olive oil

1 can petite diced tomatoes with juice

1 can black beans drained and rinsed

¼ cup diced onions

1-2 tablespoons pulverized (I mean finely minced…:) jalapeno slices

2 teas. garlic powder

1 teas. dried cilantro

1 cup rice, cooked

1 cup shredded cheddar cheese

¼ teas. fresh ground black pepper

1/4 teas. salt

Optional

2 cups small broccoli florets

Instructions –

Heat oil in large skillet.

Cook chicken until just done. Remove from pan.

Stir in tomatoes, beans, onions, jalapenos and seasonings. Let simmer.

Cut chicken into chunks. Add back to pan.

Add rice to pan.

This would be the time to add broccoli if using.

Cover and simmer for about 5 minutes.

Turn off heat and add in cheese. Stir gently until blended and cheese is melted.

Makes 4 servings.
