This is a fast dinner recipe from…hmmm, 1970s? 80s?
It still works on super busy nights.
1 Tablespoon Butter
4 medium skinless boneless chicken breast halves
1 can condensed Broccoli Cheese Soup *
½ cup water or milk
2 cups broccoli florets
1/8 teaspoon black pepper
Melt butter in skillet over medium heat.
Cook chicken until browned on both sides, and juices run clear, 8- 10 minutes.
Spoon off any fat from pan.
Stir in remaining ingredients.
Heat over medium heat until boiling.
Reduce heat to low.
Cover and simmer 10 minutes, or until chicken is fork tender. Stir occasionally.
Commonly served with rice.
To make this dish go farther, shred the chicken, or cut into small chunks. Increase the milk or water to 1 cup. Mix the cut up chicken and 1 cup rice into the Broccoli Cheese mixture.
