Some days, we only have a few minutes to come up with dinner.
Keep it simple and stay calm.
Pick a meat that can be seasoned and sautéed in just a few minutes. That can be steak, chicken breast, pork chops, or fish. Or even hamburgers. Something that only requires a few minutes per side.
You can throw potatoes in the microwave, or cook up some egg noodles, or open and heat a can of lowfat refried beans, or any beans for that matter.
While the meat and side dish are cooking, cut up fresh vegetables and/or fruits for a platter or salad. This requires no cooking.
Ta-Da! Dinner!
One of my fast go-to’s is pork chop, sweet potato, and steamed broccoli. Or you could do steak, baked potato and salad.
Another favorite time saver of mine is to warm up and shred leftover chicken. Warm up some lowfat spicy refried beans. Put out sliced tomatoes, shredded lettuce, shredded cheese, salsa, warm tortillas and cut up fruit. A fun quick healthy dinner. Sometimes when I’m cooking chicken and I know I have a busy day coming up, I’ll cook extra.
You can come up with tons of combinations. Once you get the hang of this, you can have a great dinner on the table in 15 or 20 minutes.
