Mexican food is a lot of fun, isn’t it?

The other cool thing about Mexican food is that you can use less meat because you can fill in with beans, rice, cheese, and vegetables.

Another cool thing is that people can make their own creations.

The Cheesy Salsa Chicken Skillet (Sante Fe Skillet) is a hearty dish. You can serve it in a bowl, on tortillas, or with tortilla chips as a dip.

The Chicken Fajitas are so good! A little more work cutting up all the stuff, but so worth it!

Chicken Wraps are a simple fun meal that I make probably a little too often.

You need a warm flour tortilla. On that you put some refried beans, some shredded cheddar cheese, some shredded chicken, diced tomatoes or salsa, and some shredded lettuce.

You can put out avocado, diced onion, jalapenos, sliced olives for people to create their own masterpiece.

Growing up, my daughter used to like ranch dressing on hers. Now she uses a little hot sauce. I know this is going to sound weird, but I put a just a few drops of Open Pit on mine.
