This goes great with grilled sausage, or chicken, or steak, or pork chops, or…

 

1 medium head of red cabbage

2 tart green apples – cored and thinly sliced

2 Tablespoons butter

2 Tablespoons olive oil

2 medium onions – thinly sliced

1 Tablespoon brown sugar

½ teaspoon caraway seeds

½ teaspoon ground coriander

1/8 teaspoon ground nutmeg

Salt and freshly ground black pepper to taste

¼ cup dry red wine

2 Tablespoons apple cider vinegar

 

Slice cabbage into ¼ inch strips.

 

Rinse in a colander under running water and shake to loosen strips.

 

Steam for 5 minutes.

 

Meanwhile, cut your apples and onions.

 

Add apples to cabbage and steam for another 2 to 3 minutes.

 

Run under cold water and set aside to drain.

 

In a large pot, melt butter and oil. Sauté onions with sugar and

spices until soft. About 10 minutes.

 

Add wine and vinegar and simmer for about a minute.

 

Add cabbage and apples and toss to coat. Cook another 2 minutes.

 

Serve immediately.
