Dressing –

1 tablespoon extra virgin olive oil

1 tablespoon balsamic vinegar

1 tablespoon tomato juice

1 small garlic clove pressed

½ teaspoon sugar

1/8 teaspoon course ground black pepper

dash salt

Salad

3 large tomatoes, sliced

3 tablespoons coarsely chopped fresh basil

3 tablespoons chopped fresh chives (or green onion tops)

1 tablespoon chopped fresh Italian parsley

Whisk together dressing ingredients

Place sliced tomatoes on a serving plate

Sprinkle with fresh herbs

Spoon dressing over the top

Serve

In this salad, the herbs are actually part of the salad. If you are stuck and have to use dried herbs, reduce to one teaspoon of each and add to the dressing.

If you’re like me, you rarely have tomato juice in the house, right?

You can substitute V8, or use watered down ketchup. The spicy V8 gives it a kick!
