Another old recipe. The secret is adding the potatoes warm.

6 medium red potatoes, peeled and cubed

1 cup lowfat mayo

2 teaspoons sweet pickle relish

¼ teaspoon salt

¼ teaspoon pepper

¼ cup chopped carrot

¼ cup chopped celery

¼ cup chopped red onion

2 hard cooked eggs

¼ teaspoon paprika

Cook potatoes in boiling salted water for 10 – 15 minutes until tender.

Meanwhile, combine mayo, relish, salt and peppers.

Add carrots, celery, onions, and eggs.

Drain potatoes, and gently mix into mayo mixture.

Cover and refrigerate until serving.

Makes 4 servings

What can I say? I like bacon and black pepper in my potato salads.
