Use any combination of these vegetables

 

Zucchini

Red bell pepper

Green bell pepper

Squash

Onion

 

Cut vegetables into ½ inch wide strips

 

Toss with your favorite vinaigrette type dressing

 

Sprinkle with fresh ground black pepper

 

Broil for about 10 minutes, stirring occasionally, until vegetables are just tender – not burned.

 

I like to add the zucchini after a couple of minutes so it doesn’t get too soft.

 

This is great as just a side dish by itself, but you can also –

 

Serve with pasta or rice

Put on top of hamburgers or sandwiches

Serve drizzled with a little more vinaigrette and top with some feta cheese.
