tuna-subHere’s a fun idea for your meatless Fridays – Tuna Salad Subs.

For 2 six inch subs you will need –

Rolls or french bread cut to size. I like using french bread because I can make the sandwiches a little smaller. They are very filling!

  • 1 can of tuna in water, drained.
  • 1 hard boiled egg, chopped
  • 1 Tablespoon Mayo
  • Ground Black Pepper to taste.

Optional, add chopped onions or chopped green onion tops. Mix these ingredients well. Done.

Sorry, no celery or pickle in mine!

I use just enough mayo to hold the salad together. I don’t want it dripping in mayo. If you do, just have a mayo sandwich and be done with it, right? Plus, all those calories you don’t need…just sayin.

Cut each roll open. Wrap each roll in a paper towel and put in microwave on defrost setting for 15 seconds to warm and soften.

Put tuna salad, cheese, lettuce, and vegetables of choice on roll.

You can use lettuce, spinach, onions, tomato, avocado, green or red pepper rings.

Serve with a tossed salad and maybe some cantaloupe.

Simple, delicious, and cheap. You can’t get much better than that, can you?
